I'm not going to go off on some grass-fed beef post. I think Ben managed to say pretty much all the important points on his post today. I grew up on a farm, and once I had moved away, travelled the world, and moved back, I had forgotten how GOOD grass fed beef tastes compared to average grocery store meat.
I was so fortunate, growing up like I did on a farm with a HUGE garden, and a barn full of free-range chickens and pastured cows. Of course, I wanted white bread and twinkies when I was a kid, but what I got was fresh plums and raspberries...So today, with healthy eating in mind I am making tacos with lettuce leaves instead of shells. Crunchy and delicious.
1 pound ground beef
1 large onion
1 sweet red pepper
1 pound mushrooms
1 T. cumin
1 T. chili powder
Salt and pepper to taste.
Avocado
Salsa
Tomato slices
Lettuce leaves (I used iceberg for crunchy-ness factor)
Saute onion, beef, peppers, and mushrooms until beef is cooked through, add chili powder and cumin and serve with salsa, avocado and tomato slices nestled in lettuce leaves.
