Whipped Parmesan Cauliflower




So tonight for dinner I decided I needed to use up some dairy. I have a lot of cream and butter, and two kinds of cheese. And one of my goals for this month is to wean myself off dairy eventually, saving it for special occasions rather than a daily thing. (I have misgivings about how this will go--dairy is something I am very attached to--and I have tried to give it up before to no avail.) So, back to the recipe...

2 cups frozen cauliflower
4 T. heavy cream
2 ounces parmesan cheese
2 T. butter
1 t. garlic powder
1 t. freshly ground pepper

Boil the cauliflower until very tender, then drain thoroughly. Put cauliflower in a mixing bowl with all the rest of the ingredients, and using a blender, whip until it becomes the consistency of mashed potatoes. Scrape into two ramekins and bake in the oven for 20-30 minutes. Serves two.

I paired it with london broil and zucchini. The off-white pile of stuff to the left in the picture is horseradish mixed with homemade mayo. I have to apologize for the photo, it looked a little unappetizing, (I don't have the best camera).
