Steak and Salad


Tomorrow M is going to get his blood drawn for cholesterol testing, so tonight I am loading him up with good HDL things--wine, grass fed beef, olive oil...

I marinated the steak in a mixture of olive oil and oregano with a little balsamic vinegar, garlic and salt, and then grilled it for about ten minutes per side so it was still nice and rare in the middle. The salad is a standby in our house--Apple and Sun Dried Tomato Salad--very easy, just arugula, chopped sun dried tomatoes, walnuts, green onions, and a sweet apple thinly sliced tossed with a vinaigrette of olive oil, chopped sun dried tomatoes, dijon mustard, and raw apple cider vinegar.

I am nervous about M's blood test. I feel confident that his cholesterol will be much improved, but what if it isn't? There is always that chance I suppose. Can I convince him to keep following the Paleo diet with me? In a couple of weeks when we get his results back I guess we will see...
