Budget meals

I'm still working on coming up with the 10 budget recipes to base my weeks around. Perhaps a better way to do it would be to just share what I eat each day, and at the end of the week come up with two or three recipes that worked and were budget friendly.

M and I are sporadic about breakfast. I sometimes have some leftover meat and fruit or carrots, around 7:30am when I am at work, followed by a snack of sunflower seeds, pepitas, or walnuts around 10:30. Other times I skip breakfast and don't eat until 1 or 2, giving myself a fast of 16 or so hours. I always have a big salad for lunch. Today it was wild arugula, sprouts, shredded carrot, and chicken breast with tomatoes. I make my own olive oil and vinegar dressing. The chicken was from Trader Joe's. It was only "natural" free range chicken rather than organic--and it cost about half the price. All in all, lunch was about $3.50/person. I will try to post dinner with pictures (need to charge my camera) :)
