Ahoy, me Hearties! In honor of International Talk Like a Pirate Day, I thought I would make something appropriate. This chicken and vegetable dish is a perfectly primal recipe, (and is also excellent for using up vegetables you may have lying around in your kitchen.) I used a free range chicken that I got on sale some time back for $7.00, and so this ended up being a fairly budget-friendly meal. I served it with my Apple Mustard Slaw. According to my calculations, the entire meal (4 servings) was about $4.87 per serving. Of course I didn't have to buy the alcohol since I had about 1/2 cup leftover rum from about a year ago still in my pantry...but it could also be made with apple cider or apple juice for a less expensive option. I hope you enjoy it, and just for fun, I translated it into Piratespeak. Savvy?
Applejack Chicken (or Chicken Bumbo)
1 whole chicken, cut up fer fry'in
salt & freshly ground black pepper
1 lb sweet potatoes, scrubbed
2 large carrots, scrubbed
4 ounces green beans
1 large onion, chopped
1 zucchini, chopped
3 coconut oil, divided
1/4 cup Applejack or 1/4 cup Bumbo
1 cup grass fed cream
Cut scrubbed sweet potatoes into 1 1/2" cubes; cut carrots in half, cut each half into thirds; trim beans an' cut into 1 1/2" lengths; cut onion into 1 1/2" cubes; cut zucchini in half lengthwise, then cut each half into quarters.
Sprinkle chicken wi' salt an' pepper; heat 2 T coconut oil in large skillet o'er medium heat; add chicken skin side down an' cook 10 minutes until browned on one side.
Place all vegetables 'ceptin' zucchini in salted water an' brin' t' a boil; boil 1 minute an' drain.
When chicken be browned on one side, turn an' cook another 5 minutes.
In another skillet, heat remainin' 1 T coconut oil an' add drained vegetables an' zucchini; add salt an' pepper t' taste, stir gently an' cook about 5 minutes; vegetables ortin' ta still be crisp.
Add Applejack or Bumbo t' chicken; co'er an' simmer 10 minutes; unco'er an' add cream an' vegetables; brin' t' a boil, adjust seasoning; cover, reduce heat, an' simmer 10 minutes more; Serve.
Shivering me timbers - that sounds like it be mighty fine grub!
