Here is a full week's worth of groceries for my family of two. Generally during the week I have to add salad ingredients and fresh berries to this pile periodically. (The butter on the left is safely locked away in the freezer.)
You will also see a bunch of dried fruit tucked in here and there--make no assumptions--we rarely eat dried fruit, it is a special treat reserved for emergencies only. Every week I try to add something to our diet that we don't eat very often--this week it was leeks and artichoke hearts. I made stuffed chicken breast with proscuitto and artchoke hearts and minced leeks a couple of days ago. It is pretty amazing what you can come up with when you are low on groceries! I've started shopping at Trader Joe's more because they tend to be budget friendly, and do have a lot of grass fed beef and chicken. Their organic fruit is also pretty well-priced. Tonight I am making curried cauliflower and chicken stew for dinner. If it turns out well, I will share it with you...
