Recipe of the Week--Chicken Puttanesca


I haven't posted a recipe for a while, so this morning I decided I must choose one to share with you, having been inspired by delicious photos from Dr. Dan and another favorite blog, Everyday Paleo. So, I've been in a Valentine-y sort of mood lately. Valentine's day is just around the corner, and I'm a romantic, so I thought I would create a budget-friendly Valentine-inspired meal.

I call it Chicken Puttanesca for now, although, I'm not wild about the name, "Whore's Chicken" really doesn't sound very romantic...

So, to begin, you butterfly and pound flat two chicken breasts. They should end up in a heart shape like this:



Then you carefully place a layer of Fresh basil on top of the breast:



Followed by a layer of spinach:



And a layer of sliced mushrooms (portobellos, or for the same flavor with half the cost, small brown crimini mushrooms, although if you can afford it wild mushrooms would be yummy!):




Then you carefully roll it up and place it in a baking dish and cover it up with sauce. I put about a cup of Puttanesca sauce in the bottom first, drizzled with a little olive oil. (I used Trader Joe's Puttanesca sauce--which has all good ingredients--although, having never been a "jarred sauce" sort of person, I had to work on it a bit, adding garlic, shredded carrot, and more crushed tomatoes and letting it simmer for a while first...)



Bake for 1 hour at 350, then slice and serve with sauce and salad. Voila!
