Sometimes it gets a little boring posting "what I ate today," but I think there is a real need to show what real food eaters eat day to day. Especially if you are trying to follow any kind of budget. So, here it is...
Breakfast as you can see above was two hard boiled eggs, 5 strawberries and a handful of carrots. (I bought a huge bag of organic baby carrots at CostCo about a week and a half ago and am still eating them...)
For my snacks this week, I have been taking carrots, apples, and pumpkin seeds (I had to add the pumpkin seeds to my shopping list for the week, and a couple of good organic eating apples as well since the ones I had previously turned out to be mushy!) I may have to make applesauce with them.
Lunch, which I sadly have no picture of was leftover chicken from my weekend over salad greens with a homemade vinaigrette of olive oil and balsamic vinegar.
Dinner was Pork Chops which I grilled, along with pan-fried zucchini and mushrooms and accidentally deep fried carrots. (They were meant to be braised, but the oil mixture got hot and bubbly, and the pan was apparently more shallow than I imagined--the result was interesting, but not braised exactly).
Gratz to me for sticking to my budget!
I cooked three large pork chops, and had enough leftover for lunches today and a couple of ounces for breakfast to go with my walnuts and carrots.
So far this week I have spent $36.00. I am trying to keep it under a hundred a week, so we shall see what happens--I really think the key is using what I have and only buying what I need when I need it. Things seem to stretch further than I think they will. I just fill in the cracks with carrots, oranges, apples and a handful of walnuts or pumpkin seeds here and there. My husband seems to have kind of a ravenous appetite, whereas I notice mine is much less than it used to be. I walked a little over 3 miles and feel great!
Not boring at all!
