Budget Menus for Week Two (and shopping list)

I took a quick inventory of cupboards and fridge today after shopping yesterday and see that I will not need to buy any fruit this week. I also have a lot of chicken, some ground beef, pork chops, tomato paste, spinach and coconut milk. This brings a lot of recipes to mind.

Sunday:

Brunch - poached eggs with spinach, hamburger and bacon fry-up. 1 cup raspberries.

Dinner - Primal Moussaka with Greek salad

Monday:

Breakfast - 1 ounce of macadamia nuts, 1 kiwifruit, 1 cup raspberries, handful of carrots

Lunch - Leftover Moussaka with Greek salad, an apple

Dinner - Thai red curry with chicken served over spinach, an orange.

Tuesday:

Breakfast - 2 scrambled eggs with leftover moussaka, 1/2 mango

Lunch - Leftover curry served over raw spinach, 2 kiwifruit

Dinner - Pork chops with Spinach Sesame Salad

Wednesday:

Breakfast - Pistachio nuts & dates.

Lunch - Leftover pork with salad, an apple

Dinner - Taco salad

Thursday:

Breakfast - 2 boiled eggs, handful of macadamia nuts, kiwifruit

Lunch - Leftover taco salad, an apple.

Dinner - Roast chicken thighs with tossed green salad, sliced mango.


Friday:

Breakfast - handful of almonds, 1 kiwifruit and 1 mango, baby carrots

Lunch: Leftover chicken with salad, an apple.

Dinner: Open

Saturday and Sunday: Open

2 pounds Mushrooms(Costco 1.5 pounds of baby bellas for $4.49)
Spinach (organic,large tub at Costco $3.79)
Salad Greens (organic, large tub at Costco 3.99)
1 dozen Eggs (Omega 3 eggs QFC $4.19)
Tomatoes (2 pounds Campari on the vine, Costco $4.49)
Avocados (6 large ripe, $4.99)
Chicken breast ($2.00 a pound Costco)
2 cans Coconut milk (6 cans Thai Kitchen from Costco $7.89 )
Sweet red pepper (organic QFC)
2 pounds Ground beef (grass-fed TJ's or PCC)
Cabbage slaw (organic, QFC)
Mango (6 for $5.79 at Costco)
Kiwifruit (20 for $4.99 at Costco
Raspberries (Costco $4.99)
Eggplant (5 small $4.99 Costco)
Cucumbers (mini cukes $3.99 Costco)
Macadamia nuts (1 large can, $13.79 Costco)
Onions - 3 yellow, 1 red (QFC)
Medjool dates (large tub, $7.99)
Pistachios (large bag, $14.99 Costco)
Almonds (large container,$8.65 Costco)
Homemade yogurt (organic milk $3.99 QFC)
2 medium sized turnips ($2.12 QFC)

  1. Hi Sara. A great menu list for the week. I'm so impressed you are able to do all this planning!

    Also a wonderful resource for people to be able to understand what Paleo types actually eat throughout the day.

    I'm sure if I were able to plan like this my food bill would be lower.
