Menus for the week

So this week I did something a little different. I went shopping without a list. I just bought things that I knew we would eat, like cucumbers, tomatoes, spinach, peppers, salad greens, onions, and mushrooms...I have hamburger left over from last week in the freezer, and lots of chicken breast, so the only meat I bought were a couple of chickens for roasting. I am doing an experiment this week, and so this week is a low carb Primal week for me. My menu will reflect that, and includes most of my favorite foods--which you may note I eat pretty much every week. (Sorry if that is boring) I do have to throw in new ideas pretty regularly, because M gets bored if I don't...

M is going to be eating fruit each day since he needs more carbohydrates in his diet. We still have apples, oranges, kiwifruit, and mangoes.

Sunday:

Brunch - 3 scrambled eggs. 2 ounces leftover steak 1 sliced tomato, coffee with cream.

Dinner - 5 ounces grilled steak, 1 cup pan fried asparagus with mushrooms, 1 cup steamed spinach with butter.

Monday:

Breakfast - 2 strips organic bacon, 2 eggs fried, 1 cup coffee with cream.

Lunch - Leftover steak with salad ( 2 cups salad greens, 1/2 cup tomatoes, 1/2 cup cucumber, 2 T. Bleu cheese dressing).

Dinner - Taco Salad made with 1 pound hamburger, 1 red bell pepper, 1/2 of a small onion, mushrooms and lots of guacamole and salsa!! ( will have about 1/4 of it).

Tuesday:

Breakfast - 1 cup spinach, 3 scrambled eggs, 1 cup coffee with cream.

Lunch - Taco salad

Dinner - Roast Chicken with Green salad and roasted asparagus

Wednesday:

Breakfast - 1 slice bacon, minced and cooked with 2 scrambled eggs, leftover asparagus and mushrooms, 1 cup coffee with cream.

Lunch - Paleo Curried Salad with 2 cups salad greens (I will be leaving out the apple and raisins for my part, and making it with leftover chicken instead of tuna...)

Dinner - Chicken Puttanesca with tossed green salad.

Thursday:

Breakfast - Eggs Florentine with bacon instead of proscuitto. Coffee with cream.

Lunch - Leftover Chicken Puttanesca on spinach.

Dinner - Zucchini Spaghetti and Meatballs

Friday: open

Saturday: open
