Summer Daze...


It's that time of summer where everyone is thinking about going back to school, or settling into the idea that summer is coming to an end. Many people are trying to squeeze in last-ditch vacations, and I am no exception.

I just got back from a weekend at Birch Bay, which is a nice little seaside town in Washington state, with a good bay to explore, and lots of berry farms and farmer's markets to visit. Of course it rained the whole time, but that is always part of the picture here in the verdant PNW.

I love green, therefore I love rain. :)

I managed to stick to Paleo most of the time. One day we had spaghetti and zucchini for dinner, so I skipped the pasta and just had sauce and zucchini with some wine. I did splurge a little on fresh raspberry pie, but overall, I was good and came back without having gained a bunch of weight, which is always a risk when a set pattern is disrupted.

My favorite vegetable this week is cucumbers, so crunchy and sweet this time of year. I love them with a little salt on the side of roasted chicken, or a piece of steak!

  1. I love tiny little zucchini, no bigger than your little finger, barely cooked and tossed in a little olive oil and garlic and eaten with fresh tomatoes, just picked and still warm from the sun. Summer still seems a long way away ...
