Now that M is home, we are living off of my salary for a while as he looks for a job. This can be pretty difficult, as I work for a non-profit and my income is not exactly adequate for the area I live in. Half of my income is taken up by rent, which leaves us about $1,000 a month to pay for everything else, including food. So, we worked up a budget which gives us $10.00 a day for food.
My autoimmune disease has been flaring up quite a lot the last week or so, and I really find that eating extremely "clean" helps, so I will be budgeting quite strenuously and buying all grass-fed/pastured meat and eggs. The vegetables will probably be mixed organic and domestic, and a lot more vegetables than meat per meal, we will also be eating a lot of fruit. My first step is to come up with 10 meals that are filling and seasonable, and make it in under budget.
In addition, I have found that IF-ing and eating at my cousin's once a week really helps with the finances. I plan to continue to IF a couple of times a week, and M likes to do that as well. The rest of the time, we will be eating small breakfasts and lunches, and large dinners. Evening is when I have the most time and can be creative in the kitchen. I find cooking to be very stress relieving...
