Sitopia

I just had the opportunity to watch Carolyn Steel's TED talk. I'm home from work today because I am recovering from a painful pulled muscle in my shoulder--and even though I am exhausted, I can't sleep, so I am surfing the internet while trying not to move my arm very much, (harder than it sounds).

Craig from Year of Plenty posted this talk on his blog, as part of a series he wants to post regarding food, etc. and being a huge fan of TED I had to watch it. If you aren't familiar with TED, I highly recommend you check them out.

Anyway, due to the whole shoulder issue, I am not typing much today. I owe you a good post--M and I have started our $70 a week challenge, and my goal is to cook (a lot!) of vegetables each day, and serve it with (a little!) meat. We had to give up on the grass-fed/pastured meat and eggs idea for now. Enough for both of us for one week would have taken pretty much our entire budget. The cheapest pastured chicken I could find was $18.00! That is almost a third of our budget--so we purchased domestic meat from Costco lean pork chops, lean beef, and chicken thighs. ($37.10) Which will last us the entire month if I work carefully with it.

Here are my planned menus for the week:

SUN--Grilled pork chops with avocado and tomato tossed salad, zucchini, mushrooms, and asparagus, and 1/2 sweet potato.
MON--Left over pork chop stirfry with zucchini, mushrooms, asparagus, red onion.
TUE--Free night (my lovely cousin usually feeds us).
WED--Taco salad with 1/2 pound mushrooms, yellow onions, peppers, lettuce, tomato, & avocado.
THUR--Karney's paleo stuff with 1/2 pound ground beef mushrooms, spinach, red onion, sweet potato.
FRI--Roasted chicken thighs with apple and walnut salad and buttered green beans.
SAT--Grilled pork chops with vegetable medley and steamed spinach.

Snacks are going to be leftover pork chop, walnuts, oranges, baby carrots and boiled eggs.

Planned total for this week:

Pork: $5.55 (five large pork chops)
Chicken: $6.48 (6 large chicken thighs)
Ground beef: $2.75 (1 pound)
Avocados: $5.99 (5 large)
Campari Tomatoes: $3.99 (2 lbs.)
Mushrooms: $4.29 (2 lbs.)
Organic Mixed field greens: $3.99 (1 lb.)
Organic baby spinach: $3.79 (1 lb.)
Asparagus: $5.99 (1 lb)
Zucchini: $1.99 (2 large)
Onions: $2.99 (3 large)
Organic baby carrots: $2.30 (2.5 lbs)
Sweet potatoes: $2.33 (3.3 lbs)

Total $52.43
