I thought I would add a quick post about what I am eating this week--I bought a large pack of Tarantino Breakfast sausages at Costco--while this is a moderately processed food they don't add a bunch of junk to their sausages--no nitrates either and they are veridies gluten free, so no secret ingredients. Spices and salt are pretty much it. I don't worry too much about salt. I eat WAY less than the average American...
I also bought a dozen pastured eggs (for a small fortune) and some pastured butter, cream, and raw cheese. I know that is a lot of dairy, but I find that when I am stressed out, as in a move, it is much easier for me to relax and get through it when I have dairy to fall back on. And it is all pastured, good dairy--I am not going crazy with it, just have an ounce or two of cheese per day and some cream in my coffee.
Breakfasts this week are sausage and eggs, with salads for lunch, and dinner is meat with veggies cooked in butter. I still have a freezer full of meat, so it is very easy to throw something together--and I am still sticking to budget. I am not IFing this week--too stressed...
