
Scallop and Shrimp Coconut Curry:
Simplest recipe in the world.
Take 1 T butter & 1 T coconut oil, melt together in skillet. Add 2 T green Thai curry, let curry cook for a few seconds, stirring until it is fragrant and makes a sort of sauce. Add one finely chopped onion (I used red). Then add one thinly sliced red pepper and 5 thinly sliced mushrooms. Cooke over a medium heat for a couple of minutes, then pour into a soup pot (I used a large dutch oven). Add one large can of coconut milk, 1 pound of medium shrimp and one pound of large scallops. Bring to a rolling boil, then cover, and remove from the heat. Let sit covered for 20 minutes.
