Whole30 day 7!

So I made it one whole week, and I haven't cheated or given up yet! Today I am eating jerky (about 2 ounces) sliced cucumber, and coffee with coconut milk for breakfast. Lunch is sauteed asparagus with mushrooms and leftover chicken thighs, and spinach.
I think dinner is going to be taco salad with some really nice ripe avocados I have.

I feel like I am coming down with a cold or something, so want to be sure to eat well and sleep well the next few days, and drink lots of liquids!!

  1. Good going, Sara. I am impressed. Quite an achievement! I am almost persuaded to give this a shot myself. Maybe. But tell me truthfully - what is coconut milk in coffee REALLY like?! :)

  2. You should make some bone broth! Great for colds! I have been drinking a cup with each meal.. soo good!
    What jerky do you eat? I found a great brand...www.grassfedjerkychews.com I love their mild flavor and it's AI friendly :)

  3. Judith--Coconut milk in coffee is not bad. I find that the ratio has to be just right, but when it is, about 1/2 cup coconut milk to 14 ounces coffee (I like my coffee very strong though)--it is a pretty good substitute. It does have a faint taste of coconut. You can make a latte with coconut milk and coffee and add little cinnamon or vanilla, and to be honest you can't really tell that it isn't milk...I've tried everything to come up with a good cream substitute, and I can do this--almond milk, flaxseed milk, hemp milk--none of those even came close--plus, coconut milk thickens up well when it is cold, so it is more the consistency of cream as well. I can live with this, but truthfully, if I wasn't concerned that dairy might have something to do with my "issues" I would never give up cream or butter... :)

  4. Amanda--You are so right, have some beef bones in the freezer for just this type of situation! I made my own beef jerky this past weekend. I used a recipe I found online and modified it--basically I used some garlic and salt and pepper, along with some balsamic vinegar and a bit of Worcestershire sauce. I let it marinate a couple of days, then I dried it out in the oven for about 8 hours turning it every once in a while. It turned out pretty well. I've been using it as breakfast/snackfood for the last few days.

  7. Sara, I am starting another (yet another!) attempt at going dairy free and combining it with Fast 5, in the hope of shifting a bit of this stubborn fat I'm carrying around my middle. I am not going to post about it in my blog (yet) as previous attempts have failed miserably. But I am letting you know as I wanted to share it with someone!

    Have you come across this recipe for non-dairy coffee creamer? I am going to try it later today. It looks promising.

  8. I love that creamer! I used it last time I went dairy free--this time I am avoiding egg as well, but it was very good--a LOT like whipped cream after it chilled a bit...

    One tip I have is that if you miss dry cheeses, crushed macadamia nuts make a decent substitute--they seem to take on the flavor of parmesan a little and are great for toppings...and eat avocado with everything that should be "cheesy" you won't miss the cheesiness because you have the creamy avocado to make up for it. Good luck!! You can do it!

  9. Oh yes, forgot you are avoiding eggs. Thanks for the tips. Avos are expensive at the mo ($2!!!) because it's winter but I lashed out and bought one this morning anyway.
