I had to come up with some sort of sauce for my chicken yesterday, and to be honest I was tired of cooking. Or maybe just tired...so I threw in a bunch of stuff and made a sort of barbecue sauce. It was 1/4 cup of this smoky tomato dressing and marinade we got for Christmas (all natural ingredients, but not ideal--next time I should probably use tomato paste instead), a drizzle of honey, a teaspoon of dijon mustard and about a tablespoon of balsamic vinegar and a little olive oil. I put garlic powder and salt and pepper on each thigh, and then brushed them with the sauce and baked them in the oven.
They would have been much better if I had really barbecued them, but I didn't have time--it had to be something I could cook while I was doing other things (mainly walking my hour, and trying to finish up laundry). I also sauteed some zucchini with a little bacon and made a quick salad of mache with 1/2 of an avocado and a few tomatoes drizzled with olive oil and vinegar and a sprinkle of freshly ground pepper.
The results:
It was certainly edible, but maybe needs a bit more something. Next time I will add some fresh squeezed orange juice maybe and actually barbecue them properly, or use pineapple juice and sesame oil... Yes, maybe next time it will be Catalina Teriyaki "barbecued" Chicken. :)
