Day one of the Whole9 Challenge



So my plan was to start this on Saturday, but we had company, and after several excuses--I just ate what I was craving (rhubarb pie with cool whip and half a bottle of wine) instead of what I really needed (fresh fruit and a glass of wine). But it was good in a sense because I felt truly like crap yesterday, and so was particularly motivated to begin this challenge without any further delay. I started my day off with a coconut milk latte, 1 slice of bacon, two poached eggs, and 1 small eggplant fried in bacon fat and coconut oil.


Then after a long and relaxing morning of reading (I never have time to just read!) we had a snack of macadamia nuts and went for a nice long walk--it was drizzling out, but that's Seattle for you...besides it was fairly deserted along the trail as a result of the drizzle, which was nice.



Before dinner, I made an appetizer of shrimp stuffed tomatoes drizzled with olive oil and balsamic vinegar.



And then decided to try my hand at some sort of version of steak Oscar. We had no crab, so I subbed bay shrimp for crab, made the Bernaise sauce with thyme instead of tarragon, and olive oil instead of butter. Since I am following the Whole30 rules for the next 30 days, I had to switch out some ordinarily perfectly fine primal ingredients for do-able alternatives. I need to come up with a name for this recipe, any ideas?




Take one serving of grilled steak, and top with chopped cooked asparagus, cooked bay shrimp, and several spoonfuls of Bernaise sauce. Serve with fresh vegetables and fried mushrooms.
