I am doing things a bit differently this week. We are still following our budget successfully, but I am changing what I eat a little bit to leave out nightshade vegetables and a limit nuts and eggs. I am also being really good about not having any dairy...Nightshades are not a problem for everyone, and I love them, so it will be hard, but there is significant research that suggests that people with autoimmune disorders should avoid grains, dairy, beans and nightshade veggies in order to best combat the inflammation that is prevalent.
Sunday: Grilled pork chops, apple and walnut tossed salad with vinaigrette, green beans.
Monday: Roast chicken, sautéed asparagus with mushrooms, sweet potato.
Tuesday: Pumpkin bisque with leftover chicken, pear and walnut salad, asparagus and mushrooms.
Wednesday: Slow cooked Paleo stewed pork with parsnips, carrots and onions
Thursday: Taco salad with lots of guacamole
Friday: Free night (dinner with Cathleen)
Saturday: Steak with apple walnut salad and asparagus
