Recipe of the Week: Sweet Potato Hash



This recipe is the result of a serious craving for something sweet and salty, but the knowledge that if I ate what I really wanted (at least a full pound of Reese's Peanut Butter Cups) I would regret it...While this recipe has no chocolate (or peanut butter for that matter) it is very satisfying in an almost decadent way. Probably you wouldn't want to eat this every day, but once in a while, maybe on a Sunday, for brunch, it makes a wonderful addition to eggs and fruit. We had it with poached eggs and fresh tomatoes.

Ingredients:

Two previously baked sweet potatoes
1 large sweet onion, thinly sliced into rings
Clarified butter (I used about 2 T.)
2 ounces of diced lardon (or bacon)
1 pound ground beef.
salt and pepper.

Brown the pound of hamburger in a large skillet, adding salt and pepper as desired. In a separate skillet, brown the onion in 1/2 of the butter until it begins to carmelize. Add the lardon or bacon, and add to the onions with the remaining butter, let it continue to cook on a medium heat until the bacon is cooked and the onions are carmelized. Dice the sweet potatoes,and add to the mixture. Stir in the browned hamburger, and mix thoroughly. Turn the heat to low, and let the mixture heat through, stirring frequently. YUM!

  1. I am a BIG fan of sweet potato hash. I serve mine up with a dollop of sour cream (not exactly paleo, but paleo-ish and arguably okay b/c the cream's been fermented).

  2. Hi Sara,
    That looks really good. I never liked Sweet Potatoes as a boy and recently tried them. I did not make them too well and...they still aren't one of my favorites. I am trying to like them though. I think I may revisit this page later and take another go at it.
    Anyway...we are off to Florida!!! See you soon.
